Preparing the perfect steak seems like a daunting task. Our rib eye with soy bourbon marinade can be prepared ahead of time and is packed with flavor from a blend of soy sauce, lemon, brown sugar, and bourbon.

Ingredients | For 4 servings

Marinade:
¼ cup water
5 tsp. dark soy sauce
1 tbsp water
1/3 cup bourbon whiskey
2 tbsp. Worcestershire sauce
2 tsp lemon juice
1 tbsp. brown sugar

Meat:
2 rib eye steaks, 1 lb. each
2 tbsp. clarified butter

For seasoning:
Salt
Black pepper, freshly ground
Nutmeg, freshly grated

 

Preparation

1. In a baking dish, mix all the ingredients for the marinade.

2. Rinse the steaks briefly under cold water and pat dry with a kitchen towel. Place the steaks in the marinade and let sit for at least 24 hours. Turn several times.

3. Remove the meat the next day and place the marinade to one side.

4. Preheat the oven to 400˚F. In a cast iron skillet, heat the clarified butter and sear the steaks for about 5-6 minutes per side, or until a golden brown crust develops. Once the steaks are seared, transfer the cast iron skillet to the oven. Depending on your desired doneness, the steaks will need to cook for up to 15 minutes.

5. For the finishing sauce, take the remaining marinade and let it simmer in a small saucepan until it reaches a syrup-like consistency. When the steaks are finished cooking in the oven, add the excess meat juice to the sauce, and season to taste. You can serve the sauce in a gravy boat for easy pouring. Let the steaks rest for 10 minutes before slicing, in order for the juices to redistribute evenly.
